Baby Lima or Butter Beans are a light-colored variety known as Carolina or sieva beans. Regular Lima beans are a much larger variety and more yellow. Baby Limas make an excellent side dish and are great as a creamy base for soup. Use in stew, for dips, spreads, mashed, and in salads. Combined with sweet corn, they make the famous dish succotash.
